tofu w. bell peppers + onions

here is another fairly easy weeknight dinner to make. and tofu is used in lieu of meat making it a great vegetarian dish. give it a try!

ingredients: {serves 4}
• 12 oz. firm tofu {drained weight}
• 2 cloves garlic, crushed
• 4 T sweet chili sauce
• 6 T canola oil
• 1 onion, sliced
• 1 green bell pepper, seeded + diced
• 1 T sesame oil
• cooked brown rice

to do:
with a sharp knife, cut the tofu into bite size pieces. place into a shallow glass dish. mix the garlic, soy sauce and sweet chili sauce and drizzle over the tofu. toss well to coat, cover w. plastic wrap and let marinate for about 20 minutes. meanwhile, heat the oil in a large wok or pan. add the onion and stir-fry over hight heat until brown and crisp. remove the onion with a slotted spoon and drain on paper towels. add the tofu to the hot oil and stir-fry over medium heat for about 5 minutes. stir gently to avoid breaking up the tofu. carefully pour off all but about 1 T of the oil from the wok. add the bell pepper to the wok and stir-fry for 2-3 minutes, or until softened. return the tofu and onions to the wok and heat through, stirring occasionally. drizzle with sesame oil. spoon the stir-fry over cooked brown rice and serve immediately. enjoy!
