salmon w. shitake mushrooms in a sesame garlic sauce

if you want a quick and easy, deliciously healthy meal, then here’s a great one to try!

ingredients: {serves 2}
• 2 4-6 ounce salmon fillets {preferably wild caught}
• 2 garlic cloves minced
• 1 inch fresh raw ginger minced
• 3 green onions thinly sliced
• 4 whole shitake mushrooms sliced
• 4 T oyster sauce
• 2 T soy sauce
• 1 t sesame oil
• a splash of shaohsing rice wine {chinese cooking wine} or any other kind of white wine

to do:
preheat oven to 400 degrees. meanwhile, rinse salmon fillets lightly and pat dry gently. place fillets onto individual sheets of tin foil. scatter with garlic, ginger, shitake mushrooms and green onions. then drizzle oyster sauce, soy sauce and cooking wine atop finishing with sesame oil. wrap fillets like little packages and place onto a baking sheet. bake for approximately 20 to 25 minutes. to serve, place individual packages onto each plate and enjoy with bowls of miso soup, hot rice and steamed vegetables. enjoy!
