brats w. caramelized onions

if you’re from the midwest or know anyone from the midwest, chances are you’ve tried one of these delicious things! up until several years ago, i had never had one before, but it’s pretty apparent that i now need a brat fix every so often. and i guess there are several ways in which to cook ‘em, like sometimes they are boiled in beer, yes beer, but i usually opt to pan fry them in sweet and slightly crispy caramelized onions!
ingredients: {serves 6 or 1 meat-loving maniac}
• 1 package of johnsonville original brats
• 1 small to medium sweet onion roughly sliced
• extra-virgin olive oil
• salt + cracked pepper
• real tomato ketchup eddie ;)
• yellow mustard
• sweet pickle relish
• sauerkraut
• chopped raw onions
• sandwich rolls
to do:
in a hot oiled pan add the sliced onions w. some salt and pepper. sautee for a few minutes until slightly translucent. add the brats to the pan and sear until golden brown. turn the heat down to low and simmer until the onions have turned caramel brown and the sausages have cooked through. ever so slightly, toast the rolls, careful not to over toast because they will be too crisp and hard to eat. place the brats into the rolls and dress with the condiments listed, or your favorites and serve immediately with some tasty beverages. enjoy!

Brats are amazing. In college, there was a little cart that sold them on the street after all the bars and clubs closed and the line of drunk college kids wrapped around the block. So worth it though!
