tomato and peach salad w. feta

i came across this recipe a couple of weeks ago while perusing the wall street journal at the library. so, of course, i scoped it out online later that day for the digital write-up. this is so refreshingly tasty on a hot summer day or evening. go make this! {note: i adjusted my measurements slightly to fit what i had on hand.}

ingredients: {serves 4}
• extra-virgin olive oil 3 T
• salt to taste
• 2 ears fresh corn, shucked
• 3 ripe roma tomatoes, sliced and diced
• 2 large yellow peaches, sliced and chopped
• 1/4 cup thinly-sliced red onions
• 1/2 cup sheep’s milk feta crumbled

to do:
toss all of the ingredients together in a bowl. add the olive oil and toss to coat. season with salt to taste and crumble feta cheese atop – serve immediately. enjoy!
